A delicious and healthy no bake snack that tastes to good to be true. My biggest challenge with these nutritional happy balls is not eating them all at once. They just taste and look so good. Everyone loves them; even the kiddies.
The dates give the balls a chewy caramel constancy and sweetness which pairs wonderfully with the coconut and lemon. Just looking at them puts a smile on your face and when you pop it in your mouth you get a zesty explosion of flavours making them simply irresistible.
If you on busy and on the run like most people these are so quick and easy to make and they will last you a full week (well we can try hehe)! I love to pop one in our both before a yoga class if I havent had time to eat and need a bit of energy to get me through.
They have a great texture and taste with the perfect blend of sweet and savoury. Being gluten free, vegan and paleo they are a good all rounder for everyone; plus they are full of good fats, fibre and protein.
What is great about this mixture if you can ix it up and get creative. You can roll them in any of your favourite toppings like edible flowers, goji berries, shredded coconut, bee pollen (not vegan) and herbs (we love lemon basil). Or why not try adding a pinch of turmeric for some added colour and health benefits or a drop of food grade lemon essential oil for an extra lemon hit? I love to swap the lemon for orange, it’s delish! You can also swap the cashews for any of your favourite nuts of seeds.
A few little tips for selecting your ingredients:
With nuts its best to buy activated or activate them yourself to aid with digestion. Not all of us have a dehydrator to be able to do this but if you do have this luxury its highly recommended.
If you cannot access medjool dates you can use any dates but you might like to soak them first.
Organic ingredients are always best. Try to get them where possible.
Storing your balls
You can keep them in the fridge for around a week and also freeze them. I generally find freezing them is a safer option so I dont eat them all at once.
